How much concrete strength is increased after stopping curing?

After stopping of the curing, the strength gain is purely dependent of how much water available inside the concrete for completing reaction and forming the bond.
During hydration process, heat is generated and environmental conditions also can make evaporation of water present in concrete.

So, we do not know in details about effect of temperature, humidity, hydration heat and evaporation losses causing due to it. we can simply say that, when you stop curing, it stops gaining strength.

We do not know about from where water is evaporating and at what locations water is not reachable to cement particles for hydration.

Strength of the concrete cured at site will always be less than what we achieved at lab condition (we cure concrete for 7 to 10 days, theoretically concrete in structure will have around 70% strength of what we get at lab condition)

Keeping curing for longer time will help concrete to become more sound.
