Normally the density of the brick varies from 1800 to 2300 Kg per cum depending on the porous structure of it.
Density is the property of the brick so if you take the broken piece in your hand, it will have the same density as it was having when it was not broken.

It is very easy to calculate the density of the brick, take a brick and slice the cube from it, measure it dimensions to calculate the volume of it. Put the sliced cube of brick into oven and dry the same at 100 to 110 degree for few hours and measure its weight.

Weight divided by volume will give you the density in Kg per cubic meter.
