Sunla is a form of lime which is used for getting better finishes by adding it into cement mortar.

Sunla is also used for fixing the dado tiles by adding it into a cement paste.

Sunla helps in reducing the hydration process - it acts as a retarder and also do act as a water retainer.

Gypsum is also another form of lime, but its applied on wall directly without mixing it with anything. Gypsum is also added into cement during manufacturing process to increase the setting time of cement.

Sunla is stronger than Gypsum as it wont get disintegrated / eroded when it comes into contact with water.

I do not know about chemical composition in details for both the product but above are my observations.
